Borrowdale Tea Bread

 

50g mixed fruit soaked in 450ml cold tea overnight

250g plain wholemeal flour

1 tsp bicarbonate of soda

225g brown sugar

25g margarine melted

1 egg

loaf tin

 

Method

Mix all the ingredients together leaving the fruit until last.

Place into a lined loaf tin and bake for 1 ½ hours at 170C gas mark 4
