Cod in Lemon Sauce....

4 large cod fillets
1 knob of margarine
1 tbsp sr flour
1 tbsp milk powder
1 lemon juiced and zested
lemon wedges
chopped parsley
fresh ground black pepper
1 tsp mustard
1 greased oven dish

Method

Melt the margarine in a pan and slowly mix in the flour and milk powder.

Add the lemon juice and zest to the sauce slowly.

Add in the  mustard and ground pepper to taste.

Roll the cod fillets and place them into the dish.

Cover with the sauce and bake for 40 minutes at

150C gas mark 3.

Garnish with lemon wedges and parsley and serve.
