Salad Nicoise....

1 lettuce shredded
67g potatoes cooked and diced
450g green beans topped and tailed
9 tomatoes quartered
1 large tin of tuna drained and flaked
100g black olives

Dressing

120ml  oil

60ml vinegar

1 tsp mustard

1 tsp honey

seasoning

Cook the beans for 5 minutes in boiling water.

Drain and rinse in cold water until cold.

Combine all the salad ingredients together and lightly toss.

 

Whisk the dressing ingredients together and pour over the salad  

 

Garnish with black olives and parsley.
