Pasta Salad with Cashew Nuts

 

225g pasta – bows or spirals

1 green pepper

1 red pepper

4 tomatoes

1 punnet of fresh cress

juice of ˝ lemon

2 green apples

2 oranges

50g cashew nuts

50g raisins

75ml vinegar

150ml olive oil

 

Method

Cook the pasta in boiling water until al denté and drain. Allow to cool.

Wash and chop the peppers, tomatoes, apples and oranges and mix in with the cold pasta. Mix in the cress.

Whisk the oil, lemon juice and vinegar together and pour over the salad.

Mix well and garnish with the cashew nuts.
