2 packs fresh bean sprouts

4 eating apples chopped

225g carrot grated

100g peanuts

Dressing:

150ml soy sauce

300ml apple juice

150ml sunflower oil

pepper to taste

lemon juice

 

Method

Whisk the dressing ingredients in a large bowl.

Add the salad ingredients and toss thoroughly.

Sprinkle the nuts over the top.

Garnish with the grated carrot.
