Pea
and Mint Soup
450g
dried green peas
450g
courgettes chopped
1
large onion chopped
2
tbsp dried mint
2
large sprigs of fresh mint
600ml
vegetable stock
seasoning
1
tbsp oil
single
cream for garnish
Method
Soak
the peas overnight and drain off.
Sautee
the onions and the courgettes until tender.
Add
in the stock and peas and cook until tender.
Add
in the mint and season well.
Simmer
for 5 minutes, allow to cool and liquidise.
Garnish
with the single cream and serve.
