Carrot and Orange Soup

1 tbsp oil

1 onion

900g carrot grated

˝ tsp nutmeg

˝ tsp paprika

fresh coriander chopped

1 fresh orange – zest and juice

600ml vegetable stock

seasoning

 

Method

Sauté the chopped onions in the oil until soft and add in the carrots.

Continue to sauté for 10 minutes.

Add in the stock, spices, coriander, orange zest and juice.

Bring to the boil and simmer for 40 minutes.

Cool a little and liquidise.
